September Recipes

Chicken Parmesian
I have made this from scratch but cheated this time and used frozen chicken patties.

Bake the chicken patties according to directions. At the same time, cook 12 oz spaghetti noodles. Drain and toss spaghetti with 2 1/2 cups of a 26 oz jar of spaghetti sauce. I use Prego. Transfer to a greased 9x13 baking dish. Place hot chicken patties on top of pasta. Spoon remaining sauce over the top. Sprinkle with 1/4 cup Parmesian cheese and 1 1/2 cups shredded Mozzarella cheese. Bake at 400 for 5 minutes or until cheese melts.

Banana Cake with Penuche Frosting
Combine 2 1/2 cups flour, 1 1/2 cups sugar, 1 1/2 tsp baking powder, 1 tsp baking soda, and 1/2 tsp salt. Add 3 mashed bananas, 2/3 cup buttermilk (2 tsps lemon juice and milk to make 2/3 cup, let sit 5 minutes before using), 1/2 cup shortening, and 1 tsp vanilla. Mix until combined. Add 2 eggs amd beat for 2 minutes. Pour into greased 9x13 pan. Bake 350 for 35 minutes or until a toothpick comes out clean. Cool completely on a wire rack.

For frosting: Melt 1/3 cup butter in a saucepan. Stir in 2/3 cup brown sugar. Cook until bubbly. Remove from heat. Add 3 Tbsp milk, beating until smooth. By hand mix in about 2 1/2 cups powdered sugar until frosting is of a spreading consistancy. Add a small amount of milk if icing is to thick. Frost cake immediately. If desired, sprinkle cake with chopped nuts.

Garlic Breadsticks
Mix 3 cups flour, 1 tsp salt, 1 tsp garlic powder, 1 Tbsp dry parsley, and 1 Tbsp baking powder. Pour in 1 cup milk ad stir until dough forms a ball. Melt 1 stick of butter in a 9x13 pan in a 425 oven. Sprinkle 1 tsp garlic powder and 1/2 tsp salt over melted butter. Knead the dough 5 times in the bowl. Add small amount of flour if to sticky. Roll on table into a rectangle to fit in pan. Slice dough into strips. Place dough in baking pan on top of butter. Butter will seep up between sticks. Bake 20 minutes.
