Apple Recipes

Curried Chcken

Brown chicken (I used pork chops) in 2 TBSP hot oil over medium heat. Remove meat from the skillet. Add another tablespoon oil and saute 1 chopped onion and 1 clove minced garlic. Add 3/4 cup chicken broth and 1 chopped apple. Stir in 3-4 teaspoons curry powder, 1/4 tsp salt, and 1/4 tsp cinnamon. Return meat to skillet and bring to a boil. Reduce heat and simmer about 15 minutes until meat is done. Remove meat from skillet. Stir 1 cup milk into 2 tablespoons flour. Add to pan juices while stirring constantly. Cook and stir until thick and bubbly. Spoon over meat. Serve with white rice.

This is one HOT dish. I would add less spice if I make it again.

I was out of curry and sustituted a mix of Indian spices. I used 4 tsps of mixture in place of 4 tsp curry powder. May have not been so hot with just the curry?

Stir together:
2 tsp cumin
1/2 tsp corriander
1 tsp turmeric
1 tsp ginger
1/2 tsp cayenne
1/2 tsp black pepper

Apple Crumb Pie
Combine 3/4 cup sugar, 2 tablespoons flour, and 3/4 tsp cinnamon. Stir in 6-8 peeled sliced apples. Put in a crust. Combine 1/2 cup flour, 1/4 cup sugar. Cut in 1/4 cup butter until crumbly. Sprinkle over pie. Bake at 400 for 45 minutes.

This smelled heavenly as it was baking. Very delicious served warm.

Apple Pancakes
Mix 2 cups chopped apples, 2 eggs, 2 cups Bisquick, 1 cup milk, 1 tsp cinnamon, and 1/4 cup brown sugar. Cook on griddle or in lightly greased skillet.

These are so good you don't need syrup.

Apple Cake
Calls for a fluted tube pan, which I don't have so I make it in 2 8 inch round pans. You can double the icing and stack the cakes or just serve them as 1 layer. The icing doesn't hold the top layer on very well.

Combine 1/4 cup sugar, 2 tablespoons flour, and 1 1/2 tsp cinnamon. Add 5 cups peeled chopped apples and stir to coat. Set aside.

In another bowl combine 2 1/2 cups flour, 1 1/2 cup sugar, 1 1/2 tsp baking powder, 1/3 tsp baking soda. Add 1 cup oil, 4 eggs, 1/4 cup orange juice, and 2 tsp vanilla. Beat for 2 1/2 minutes.

Pour 1/4 batter into bottom of greased pans. Divide apple mixture between pans and then cover with the rest fo the batter. Bake at 350 about 40 minutes. Cake is done when top is golden brown and toothpick inserted in center comes out clean. Cool on a wire rack.

If using the fluted pan: make 2 layers of batter with apples divided in between. Bake for an hour and 15 minutes.

Since I didn't use the deeper pan I set the timer for 20 minutes and checked it often until done.

Icing: Combine 1 cup sifted powder sugar and 1/4 tsp vanilla. Stir in milk until right consistanct, about 3 teaspoons. Drizzle over cake. I doubled recipe to cover 2 smaller cakes.

Croc Pot Apple Butter
Combine 4 peeled chopped apples, 1 cup water, 1 1/2 tsp cinnamon, 1/2 tsp nutmeg. Cook on low until thick. To test doneness, palce a spoonful on plate. Done when no watery ring forms around the edge. Keeps in fridge for several weeks.
