Happy Third Anniversary

Wednesday we celebrated our 3rd anniversary. We both commented that it feels like a lot more than only 3 years. A lot has happened in that time!




Katie, Lilly, and I went to the library that morning so I got some bananas at the green stand and made banana bread for Kevin. He loves it and we haven't been able to make muffins or bread since we got here.



I made homemade chicken and noodles, baked apples, and green beans for dinner. We had a really nice time. Then he took Abby and her friend Fanney to Girl Scouts and I had a quiet break from kids while Lilly slept and Katie played at a friend's apartment.


I made the noodles using recipes from the Langin Family cookbook. Really easy. Beat 2 eggs and 2 Tbsp water. Stir in flour until dough is thick. Roll out as thin as possible. Let dry 2 hours. I flipped the dough frequently so both sides dried and the bottom wasn't stuck to the table. Then added to boiling chicken broth. I added a small amount of cooked chicken.
The apples were super easy. Peel and slice about 4 apples. Sprinkle with 3 Tablespoons sugar and some cinnamon. Microwave 5 minutes. Stir and add 1 Tablepoon maple syrup. Stir again. Abby is my apple eater and she loved them.
Green beans had way to much spice on them and weren't very good. I cooked a can of French Style and then added butter, parsley, thyme, and basil. Next time I won't measure the spices and will just sprinkle a little of each on top of the beans.
Banana Bread- also very easy
Mix 4 smashed bananas with 1/3 cup melted butter. Sprinkle and mix in 1 cup sugar, 1 beaten egg, 1 teaspoon vanilla, 1 teaspoon baking soda and a pinch of salt. Last add 1 1/2 cup flour and mix in well. Bake at 350 for about an hour in a greased loaf pan.
Brownies for dessert
Mix 1 1/4 stick butter (10 Tablespoons), 1 1/4 cup sugar, 3/4 cup plus 2 Tablespoons baking cocoa, and 1/4 tsp salt in a double broiler and stir until melted. Add 2 tsp almond extract and 2 cold eggs and stir until shiny and thick. Stir in 1/2 cup flour and mix well. Add 2/3 cup nuts. Bake at 325 for 20 minutes. The author used almond extract instead of vanilla, it adds a nutty flavor, something different. It was really good.
Someday when the kids are grown we will go out for romantic dinners with candlelight and wine. Maybe...
