Soup and Sandwiches



We saw this coconut juice at the grocery store and it looked so cool we finally got some to try. The pieces of coconut are suspended in the liquid. It didn't taste bad but is certainly not something I would buy again. Very strong cocnut flavor. The
liquid resembled water and the coconut bits were chewy. Lilly really liked it.

This is the street in front of the grocery store. Our street is about 3 blocks behind Abby and turn right. Abby's school is about a block down and across the street on the left.




Peanut Butter Fingers

Chicken Tortilla Soup
Chocolate peanut butter bars
3/4 cup butter, softened
3/4 cup creamy peanut butter
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 1/2 teaspoons vanilla
1 1/2 cups flour
1 1/2 cups oats
3/4 teaspoon baking soda
1/2 teaspoon salt
6 ounces chocolate chips
Cream butter, pb, and sugars. Add eggs, beating well with each addition. Beat in vanilla. Combine dry ingrediants (except chocolate chips) and add to cream mixture and mix well. Bake in greased 9 by 13 pan at 325 degrees for 20 minutes. Immediately sprinkle with chocolate chips. Allow chips to soften for a few minutes and then spread over bars. Beat ingrediants for glaze. Add enough milk to achieve spreading consistency. Carefully spread over warm bars. Sprinkle with peanuts. Cool before cutting into bars.
Glaze: 3/4 cup peanut butter, 1 cup powdered sugar, 4-6 Tablespoon milk, 1 cup choppoed peanuts
I didn't have chocolate chips, so instead of using those and the glaze I used an icing recipe. 1/2 cup peanut butter, 1/3 cup cocoa, 2 2/3 cup powdered sugar, 1/4 teraspoon salt, 1 teaspoon vanilla. Add milk until the right consistency to spread. Spread over cooled cookies. Sprinkle with chopped peanuts.


Chicken Tortilla Soup
Cook 2 chicken breasts in small amount oil. (I used chicken I had boiled previously.) Add 1/2 teaspoon garlic and 1/4 teaspoon cumin to chicken and mix well. Add 2 (14 ounce) cans of broth, 1 cup corn, 1 chopped onion, 1/2 teaspoon chili powder, 1 Tablespoon lemon juice, 1 cup salsa. Simmer on low for 30 minutes. Break up handful of tortilla chips in bowl. Pour serving of soup over and sprinkle with shredded cheese.
Jenn, you might try the next two. They are super easy. Yummy and the kids like them. Easy for them to hold and eat. I cut the pizza into smaller triangles for Lilly.

Pizza Grilled Cheese


Taco Puffs
Pizza Grilled Cheese Sandwiches
Butter one side of slice of bread and put butterside down in skillet. Top with 6 slices of pepperoni, 1 slice of mozzarella or provolone cheese, and a spoonful of pizza sauce (I use spaghetti sauce). Top with another buttered slice of bread, buttered side up. Cook over medium heat until each side is brown.
I found a package of sliced provolone cheese at our grocery store and made these for lunch a few times. They are quick and easy to put together.
Taco Puffs
Brown one pound hamburger with 1/2 cup chopped onion over medium heat. Drain. Stir in taco seasoning and water according to taco seasoning directions. Flatten 1 package of large refridgerator biscuits and place on a cookie sheet. Spoon 1/4 cup taco meat on each. Top with 1/4 cup shredded cheese. Flatten a second package of large refridgerator biscuits and out on top of cheese. Use a fork to flatten the edges aroudn each bisuit and seal them. Bake at 400 degrees for 15 minutes or until golden brown.
Beef and Bacon Burgers
Mix 1 pound ground beef, 1/2 cup chopped onion, 2 slices cooked and crumbled bacon, 1 Tablespoon Worcestershire sauce, 1 cup fresh soft bread crumbs, 1 egg, 1/2 teaspoon salt, 1/4 teaspoon pepper, and, if desired, 1/2 cup shredded cheese. Shape into patties. Recipes suggests coating burgers lightly with flour, but I didn't. Grill. Excellent burgers, thick like restaurants serve.
